Rubio’s celebrates new look with free tacos on Sept. 17

Ralph Rubio, the co-founder of Rubio’s, invites the public to come celebrate the grand re-opening of Rubio’s in Del Mar Highlands Town Center on Taco Tuesday Sept. 17. From 7-8 p.m., free Smoky Oaxacan Shrimp Street Tacos will be given out to everyone who downloads the new Rubio’s app at rubios.com.

The Carmel Valley location was closed for two weeks for a refresh, opening back up in time for Taco Tuesday on Sept. 3.

“This is the latest remodel for one of our most popular locations with a fresh new color palette, a word wall, succulent art and a gorgeous new patio for outdoor dining,” said Ralph Rubio. “We expanded the patio with new lounge furniture and remodeled our famous, made fresh daily salsa bar. We continue to remodel our locations to keep them fresh and are glad to be open again now in Carmel Valley.”

Two limited-edition dishes inspired by the coastal region of Oaxaca, Mexico will be available through mid-October: the Smoky Oaxacan Shrimp Bowl and the Smoky Oaxacan Shrimp Street Tacos. Each dish features sustainable, grilled ancho shrimp topped with fresh guacamole, cotija cheese and creamy Oaxacan sauce made from a smoky blend of ancho, guajillo, Anaheim, and chipotle chilies.

Rubio’s has also started offering new Keto-style cheese tortillas as well as gluten-friendly, vegan and vegetarian options.
